So today was my graduation from Wiltons cake decorating class and i made UBC graduation cake <3

Preparation:
Peel apples, remove seeds and cut them in little cubes. Put them in the pan, add brown sugar and lemon and cook them for 5-8 minutes.
Preheat oven to 170C. Mix flour, sugar and baking powder in the mixing bowl, make a little hole in the middle. Pour milk in the middle, melted butter, add eggs and lemon zest and mix everything well, starting form the middle. Add more butter if dough doesn’t stay in the shape. Place dough in baking tray and make borders, approximately 5-6 cm. Pour apple mixture on top.
For the topping: mix flour, butter, brown sugar and cinnamon. It must feel like a slightly wet sand. If butter is not enough, add some more.
Spread topping on top of the apples. Spread more crashed walnuts. Bake for about 60 minutes.

So I am finally back as i promised with more recipes. Here is SUPER CHOCOLATY CAKE Ingredients: Cake: 1 cup cacao powder 3/4 cup dark coffee 1 cup milk 2 3/4 cups flour 1/2 tsp salt 350 gr butter (at room temperature) 2.5 cups sugar 1 package of vanilla(optional) 4 eggs (room temperature) 1 tsp baking soda 1 package baking powder Frosting: 1 cup sugar(you can add less sugar) 1 cup cacao 1.5 cup milk 6 tbsp butter Preparation: Preheat oven to 160 degrees. Boil milk, add coffee and cacao. mix well and let it cool. Mix flour, baking powder, baking soda and put it aside. Beat butter on high speed until its fluffy. Slowly add sugar and vanilla. Now, start adding eggs one by one. Mix well after adding each egg. Carefully and slowly pour in cooled coffee-cacao mix and beat until its all mixed properly. Pour into greased pan and bake for an hour. Check if its done with a toothpick. Put baked cake aside and let it cool. For Frosting: in a saucepan mix milk, cacao and sugar. once sugar melts, make sure there are no lumps in the icing and add butter and let it cool. It becomes much thicker when it cools down. Cut the cake into three layers. Spread some jam(optional, cake is sweet anyways) on the first layer and some frosting on top. Repeat the same with the second layer. Pour the rest of the frosting on top, and cover the sides as well. Decorate as you wish and serve! Enjoy!

So I havent posted in a while.. Sorry for the delay, but finishing university is not a peace of cake apparently ;)
So I finally tried a cupcake recipe! Found one online. Must warn you I have never tried cupcakes before, but my cupcake lover friend liked these, so I assumed that mission is accomplished. So here it comes.
Ingredients:
2 ripe bananas
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract(optional)
1/4 cup milk
1/4 tsp vinegar
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Preparation: Preheat oven to 170C or 350F. Mash banans well. If bananas are not soft enough, leave them in freezer overnight. when u defrost them in the morning they will be very soft. Mix milk and vinegar. If you have buttercream, then use 1/4 cups of buttermilk instead of this mixture. Cream shortening and sugar. Add an egg, mix well, then add vanilla, bananas, and milk mixture. In the separate bowl, mix flour, baking powder, baking soda and salt. Gradually add it to the banana mixture. Prepare 16-18 cupcake papers. I used ice cream scoop to measure the dough. Place on scoop without the top of the dough in cupcake paper. Bake for about 25-30 minutes until toothpick comes out clean. Let them cool and decorate with buttercream. I also decorated with a peace of chocolate on top.
I used Swiss Meringue Buttercream. The first buttercream I actually liked. Recipe is coming.
